Chocolate Silk Pie

This pie is to die for!  If you think you can’t make a pie this fancy, think again! It was relatively easy and tastes like you just picked it up from the bakery.

With an Oreo crust and a silky chocolate middle with a homemade whipped cream top…OMG…one slice just won’t be enough! If you’re thinking that you don’t want to make a whole pie just for yourself, slice it up and freeze it! That’s what we did and it freezes beautifully.

Makes 1 pie

Ingredients

For crust

  • 16 Oreos, broken into pieces
  • 2 Tbsp unsalted butter, melted

For filling

  • 1 cup heavy cream, cold
  • 3 eggs
  • 3/4 cup sugar
  • 2 Tbsp water
  • 8oz bittersweet chocolate, melted and cooled
  • 1 Tbsp vanilla
  • 8 Tbsp unsalted butter, softened and cut into squares

For whipped topping

  • 1 cup heavy cream, cold
  • 2 Tbsp powdered sugar
  • 2 Tbsp vanilla
  • chocolate shavings for garnishing (optional)

Directions

  1. To make crust: Preheat oven to 350°. Pulse Oreo pieces in a food processor until fine. Add butter and use fingers to combine until butter is evenly distributed.
  2. Press crumbs firmly into the bottom and sides of a 9-inch pie plate to form the crust. Bake for about 10 minutes, until fragrant and set. Cool while preparing filling.
  3. To make filling: In the bowl of a stand mixer fitted with the whisk attachment, whip heavy cream until stiff peaks form. Refrigerate while preparing the rest of the filling.
  4. Combine eggs, sugar and water in a heatproof bowl set over a pot of simmering water. With an electric mixer, beat until thickened and a candy or instant thermometer reads 160° (7-10 minutes). REmove from heat and continue to beat until fluffy and cooled (6-8 more minutes).
  5. Add the melted chocolate, vanilla and butter to the egg mixture and beat until combined.
  6. Fold in the refrigerated cream until there are no more streaks. Transfer to cooled pie shell and refrigerate.
  7. To make whipped topping: In the bowl of an electric mixer with the whisk attachment, combine heavy cream, sugar and vanilla. Beat on high until you reach desired consistency.
  8. Spread over chocolate filling, garnish with chocolate shavings if desired and refrigerate until ready to eat.
