Biscoff Pie

After making this pie, you may never use a graham cracker crust again. Biscoff cookies are the absolute best to use when making pie crusts. It’s also pretty simple to make and takes very little time. This will be your go-to pie!

Makes 1 pie

Ingredients

For Crust:

  • 30 Biscoff cookies (32 come in a package so just eat the last two)
  • 3 Tbsp sugar
  • 6 Tbsp butter, melted

For Filling:

  • 1 cup heavy cream
  • 1 8-ounce package cream cheese
  • 1 cup Biscoff spread
  • 1/2 cup granulated sugar
  • 1 tsp vanilla

Directions

  1. Preheat oven to 325°F.
  2. In a food processor, pulse cookies until fine. Add the sugar and melted butter and mix until crumbs are evenly coated.
  3. Pat the crust firmly into a 9-inch pie pan. Bake for 9 minutes. Take out of the oven and let cool completely.
  4. In a medium bowl, beat the heavy cream until stiff peaks form. In a separate medium bowl, using the same beaters, beat the rest of the ingredients until well blended, about 2 minutes.
  5. Fold the whipped cream into the filling mixture until it’s well combined.
  6. Pour into the cooled crust and refrigerate.
