The best way to describe the process of making this dish is to compare it to lasagna. So, that’s what we called it…Mexican Lasagna.
Instead of noodles, marinara sauce and Italian sausage, we used tortillas, salsa and smoked chicken. It’s to die for!

Ingredients
- 4 tortillas
- 1 cup salsa
- 1 cup cooked chicken
- 4 cups cheese
- 2-4 Tbsps canola oil
Directions
- Heat 1-2 Tbsps of canola oil on medium heat in a frying pan and fry one tortilla at a time until golden, adding more oil as needed.
- Preheat oven to 400°. Grease a spring-form pan with non stick spray and place a tortilla on the bottom.
- Spoon 1/4 of the salsa over tortilla. Sprinkle 1/3 of the chicken over salsa and cover with 1/4 of the cheese.
- Place another tortilla on top of cheese and start layering again. Continue with remaining tortillas, layering only remaining salsa and cheese on top.
- Bake for 25 to 30 minutes or until cheese is melted and dish is heated through.
