Banana Nut Bread

The perfect thing to do with those bananas that aren’t your favorite color….make banana nut bread!

We’ve added applesauce to this recipe to cut out some of the fat. You’ll never be able to tell the difference! This bread is absolutely scrumptious!

Ingredients

  • 1 1/4 cup ripe bananas (we used 3)
  • 1 tsp lemon juice
  • 1 3/4 cup flour
  • 1 cup sugar
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1/3 cup buttermilk
  • 1/4 cup oil
  • 1/4 cup apple sauce
  • 2 teaspoons vanilla
  • 1 cup walnuts, chopped

Directions

  1. Preheat oven to 350°. Grease and flour loaf pan.
  2. In a small bowl, use a masher or fork to mash bananas. Stir in lemon juice and set aside.
  3. In a large bowl, whisk together flour, sugar, baking soda and salt. Stir in brown sugar.
  4. In another bowl, use a whisk to combine eggs, buttermilk, oil, applesauce and vanilla.
  5. Pour liquid ingredients and mashed bananas into the dry ingredients. Use a wooden spoon to stir just until combined. Stir in walnuts.
  6. Pour batter into prepared loaf pan and bake for about 1 hour. Check for doneness by sticking a toothpick or knife into the center. It should come out clean. If not done, check again in 10 minutes.
  7. Let cool in pan before removing and slicing.

    You have a typo, i just made this banana bread recipe and it requires two loaf pans, not one.

      Katie, we only use one loaf pan when we make this. Perhaps you used a smaller loaf pan or a mini pan? Ours is about a 9×5 pan.
