Molten Chocolate Lava Cake

I can’t even stress enough how much you need this cake in your life. It’s super fancy and you will impress anyone you serve it to. People will think you’ve been to culinary school. They won’t realize how easy it was to make. You don’t need to tell them though.

There used to be a restaurant in Santa Ana that served a Chocolate Molten Cake. It was served in this little bamboo box with tropical fruits and a scoop of vanilla ice cream. When you open the box, there sat this little mini chocolate cake. It didn’t look like anything extraordinary so the presentation seemed a little out there.. So then you take a bite….hot, gooey, delicious chocolate starts flowing out from the center of the cake like lava. Then it all makes sense. The box, the fruit, everything. It was the best dessert around!

Sadly, the restaurant went out of business and bye-bye went that amazing cake. My husband has been talking about that cake for well over a year so it prompted us to try to recreate it.  And we did! Only ours is even better! (minus the bamboo box)

Ingredients
  1. 1/2 cup butter, plus more for buttering cups
  2. 6 oz. bittersweet chocolate
  3. 3 eggs, room temperature
  4. 1/3 cup sugar, plus more for dusting cups
  5. 2 Tbsp flour
Instructions
  1. Preheat oven to 400°.
  2. In a saucepan over medium heat, melt butter and chocolate until smooth. Set aside.
  3. In a medium bowl, beat eggs and sugar with a whisk until pale and thick, about 5 minutes.
  4. Pour the melted chocolate into the egg mixture and mix well. Add the flour and blend until just combined.
  5. Butter and lightly sugar 4 custard cups or ramekins. Divide the batter equally between the cups.
  6. Place the cups on a baking tray and bake for 8-10 minutes, until the edges are set and the center is still soft and a bit sunken. Let cool for 5 minutes.
  7. Turn cups upside down over plate to remove from cups. Serve with a scoop of vanilla ice cream.
Notes
  1. Cakes can be made several hours in advance. Just place cups in the refrigerator. Bring to room temperature before baking.
