S’mores Fudge Bars

When we were getting ready for our picnic and a movie at Cinespia, we were thinking about perfect outdoor food. Of course, s’mores came to mind but they didn’t seem highly portable and we didn’t think we would be allowed to have an open flame in such close quarters. So we found a way to bring our s’mores already made and ready to devour.

As we mentioned on our Instagram (@delectabledarlings) recently, Lauren has an obsession with marshmallow fluff and this recipe details making your own fluff. She was super excited!  These are beyond good. If they gave Oscars for desserts, these would win for Best Picture.

For Crust
  1. 2 cups graham cracker crumbs
  2. 1/2 cup butter, melted
  3. 1/4 cup sugar
  4. 1/2 tsp salt
Fudge Layer
  1. 2 cups milk chocolate chips
  2. 1 can (14oz) sweetened condensed milk
Marshmallow Fluff Layer
  1. 3/4 cup sugar
  2. 1/2 cup light corn syrup
  3. 1/4 cup water
  4. 1/4 tsp salt
  5. 2 egg whites
  6. 1/4 tsp cream of tartar
  7. 1 1/2 tsp vanilla extract
Instructions
  1. Preheat oven to 350° Line a 9x9 baking pan with foil allowing an inch or two to hang over the edges. Set aside.
  2. For Crust: Mix all the ingredients for your crust together and press evenly into pan.
  3. Bake for 10 minutes. Remove from oven and set aside.
  4. For Fudge Layer: In a medium sauce pan combine the milk chocolate and sweetened condensed milk over medium-low heat and stir until melted. Pour immediately onto crust.
  5. For Fluff Layer: Combine sugar, corn syrup, water and salt in a small saucepan over medium-high heat. Boil together until a candy thermometer reads 240°.
  6. While mixture is boiling beat 2 egg whites and cream of tartar together until soft peaks form.
  7. When syrup is ready, turn mixer onto low and drizzle the syrup along the side of the bowl slowly combining it into the egg whites.
  8. When all the syrup has been added turn mixer up to medium high and beat for 7-8 minutes until thick and glossy. When there is about one minute left add in the vanilla.
  9. Spread the fluff on top of the chocolate layer.Turn oven onto broil and place pan under broiler for 1 minute or until the top of the marshmallow layer gets lightly golden.
  10. Cut into squares when ready to serve.
