Chicken, Broccoli, and Rice Casserole

 This casserole is the new go-to in my house! It’s yummy, easy, and “cozy-weather food”. There’s a recipe out there called Chicken Divan, ever heard of it? It’s delicious. Well, this is very similar to it. But maybe better… 

The original plan was to just make the chicken divan, and add rice. But we decided to switch up the recipe a tad more, and hope for the best.  And woo-hoo!  It was delish. That’s the cool thing about casseroles, you can’t really mess them up. It turned out perfect!

Chicken, Broccoli, and Rice Casserole

Ingredients
  1. 2 boneless skinless chicken breasts, cooked and cut into small cubes
  2. 1 1/2 cups uncooked white rice
  3. 1 bag frozen broccoli
  4. 2 cups sharp cheddar cheese, grated
  5. 4 Tbsp. butter, melted
  6. 1/2 cup bread crumbs
  7. 2 cans cream of chicken soup
  8. 3/4 cup sour cream
  9. 2 tsp. salt
  10. 1 tsp. pepper
  11. 2 tsp. garlic powder
Instructions
  1. Preheat oven to 350.
  2. In a medium saucepan, boil chicken for 15-20 minutes, until cooked through.
  3. While chicken is cooking, prepare the rice according to the directions on the package. Season the water (before you add the uncooked rice) with 1 tsp. of salt and 1 tsp. of garlic powder .(will make about 3 cups of rice when cooked).
  4. Steam broccoli according to package directions (don't over cook, you don't want mushy broccoli) Chop the broccoli into smaller pieces when it's done cooking.
  5. When chicken is done, cut into cubes and set aside.
  6. When the rice is done, transfer to a large bowl. Add the cubed chicken and steamed broccoli and combine. Then add the 2 cans of cream of chicken soup, sour cream, and 1 tsp. of salt, 1 tsp. of pepper and 1 tsp. garlic powder.
  7. Butter a 13 X 9 casserole dish, and transfer the rice, chicken, broccoli mixture.
  8. Next, add the shredded cheese.
  9. The last layer is the bread crumbs. In a small bowl, add 1/2 cup of bread crumbs to the 4 Tbsp. of melted butter and combine. Sprinkle on top of the cheese layer.
  10. Bake for 25 minutes
