Baked Pork Chops with Dressing

What I love most on a cool fall evening is some delicious comfort food. Warm and savory food makes me feel so cozy. I just wish I had a fireplace.

Pork chops smothered in stuffing is my favorite comfort meal. You want to know how many times we made these pork chops before we got them perfect? Close to 10 times. It was worth it though because these are as close to perfection as you can get. The key to pork chops is to keep them moist. They have a tendency to dry out. Cooking these for a long time in a covered dish keeps all the juices in. Even my husband raves about these!

Ingredients
  1. 2 or 3 bone-in pork chops (about 1 1/2lbs, use chops at least 1 1/2 inch thick)
  2. 2 Tbsp canola oil
  3. 1/4 cup butter, melted
  4. 2/3 cup water
  5. 4 cups bread, cubed (about 1/2")
  6. 3 Tbsp white onion, chopped
  7. 1/2 tsp dried sage
For sauce
  1. 1 can cream of mushroom soup (condensed)
  2. 3/4 cup water
  3. 1 Tbsp soy sauce
  4. salt & pepper to taste
Instructions
  1. Preheat oven to 350°. Salt & pepper both sides of chops. Heat canola oil in a heavy bottom skillet over medium-high heat. Add chops and brown on both sides, about 2-3 minutes per side. Transfer to an oven safe baking dish.
  2. In a large bowl, mix together, melted butter, bread, onions, sage and 2/3 cup of water until all bread is moist. Place mixture over top of chops.
  3. Using the same bowl, mix together the cream of mushroom soup, 3/4 cup of water and soy sauce. Pour over stuffing and chops. Cover with foil.
  4. Bake, covered, for 1 1/2 to 2 hours or until chops are fork tender (time will depend on thickness of chops).
Notes
  1. We make this dish ahead of time, cover with foil and refrigerate. We remove it from the refrigerator about 1 to 1 1/2 hours before baking to bring it to room temperature. This recipe works for 2 - 3 chops depending on their size. If feeding more people then double recipe as needed.
