Well I’m sure the title of this recipe pulled you in. It’s just as good as it sounds. Every year I make my husbands great granny’s dressing, it’s tradition. This year I thought I’d make it, but spruce it up a smidge and cross my fingers that no one is disappointed. We took an already amazing dressing recipe, and added crispy bacon, tart green apples, and used a combination of squaw, sourdough and cornbread. Normally my husband notices if I change any of his family favorites, and this time he just totally enjoyed it and didn’t ask questions. Success!
Cornbread Dressing with Crispy Bacon

Ingredients
- 1 pan cornbread (we baked ours in an iron skillet using directions on the Albers Yellow Cornmeal box)
- 10 slices sourdough bread
- 10 slices squaw bread
- 1/2 cup (1 stick) butter
- 1 1/4 cups onion, finely chopped
- 2 cups celery, chopped
- 1 carrot, grated
- 1 potato, grated
- 2 green apples, chopped small
- 1 pack bacon, cooked to crispy and chopped
- 3-4 cans chicken broth (or about 5-7 cups of reserved turkey juices)
- 2 - 3 Tbsp dried sage
- salt & pepper
Instructions
- Preheat oven to 225°. Cut sliced bread into bite sized pieces and arrange in a single layer on a baking sheet. Bake in oven until dry crunchy, almost like a crouton. (When done, increase oven temp to 350°.)
- Break up cornbread into small pieces and add it along with the dry bread and bacon into a large bowl. Set aside.
- In a large saute pan, melt butter. Add celery, onion, carrot and potato and saute until tender, about 6-8 minutes, adding apples in last 3 minutes.
- Pour sauteed mixture over bread. Add salt and pepper and sage. Mix all together, gently, using your hands to avoid breaking cornbread into crumbs.
- Pour into a large casserole dish (you may need 2) and pour in broth or turkey drippings starting with 2 cups, adding more until bread is moist but not sitting in liquid. You can toss bread around in pan to moisten.
- Bake in oven at 350° for 20-30 minutes or until hot.
