Biscoff Oatmeal Sandwich Cookies

For these cookie sandwiches, we used our Nutella Oatmeal Cookies recipe but switched out the Nutella for our original love, Biscoff Spread.  We formed the dough into smaller balls before baking and then piped a super simple buttercream onto halves before sandwiching. They were a huge hit at a recent LuLaRoe party we hosted. The girls loved them!

The sandwich middle is perfect for these cookies. It’s not too sweet and the flavor is mild so it doesn’t take away from the taste of the cookies. It adds a nice creamy texture. You may want to double the recipe!

Biscoff Oatmeal Sandwich Cookies

For cookies
  1. 1/2 cup (1 stick) unsalted butter, softened
  2. 1/3 Cup Biscoff spread
  3. 1 cup brown sugar
  4. 1 egg
  5. 2 tsp vanilla
  6. 1 1/4 cups flour
  7. 1 cup old-fashioned oats
  8. 1 tsp baking soda
  9. 1/4 cup sugar for rolling
For filling
  1. 1/2 cup (1 stick) butter, softened
  2. 1 1/2 cups powdered sugar
  3. 1/2 tsp vanilla
Instructions
  1. Preheat oven to 375°. Cream butter and Biscoff on low speed for about 2 minutes.
  2. Add brown sugar, egg and vanilla and beat until combined.
  3. Add flour, oats and baking soda, mix on low.. When mixed well, continue to beat on medium speed for 2 minutes.
  4. Form dough into 3/4 - 1 inch balls. Roll to coat in sugar. Place dough balls on cookie sheet, 2 inches apart. Press down in center with a fork crosswise.
  5. Bake for 6-8 minutes or until edges are lightly browned. (do not cook longer than 8 minutes even if you can't see any browning) Allow to cool on sheet for 5-7 minutes before transferring to wire racks to cool completely.
  6. To make filling, mix together butter and sugar on low speed until well blended. Increase speed to medium and beat for 3 minutes.
  7. Add vanilla and beat for another minute.
  8. Spoon buttercream into a piping bag or ziplock with the tip cut off. Pipe about a tablespoon onto half of the cookies. Sandwich together with the other halves.
