I kind of wish we didn’t make these. Not because they were gross or anything but because they were so amazingly good and I was on a diet and this just ruined all my hard work!! Two days of staying out of the kitchen wasted! I just couldn’t keep my hands off these. I feel defeated. I also feel happy and overjoyed and jolly and…..merry? I don’t know, I just feel really good when I eat these. They are so ridiculously good. I want to share them with the world. Everyone should have one of these. It will change your life.  Okay, maybe not your life but your mood for sure.

The crust
  1. 2 cups flour
  2. 1/2 cup packed brown sugar
  3. 1 cup (2 sticks) butter, softened
The filling
  1. 3 (8oz) packages cream cheese, softened
  2. 3/4 cup sugar
  3. 3 large eggs
  4. 1 1/2 tsp vanilla
Apples
  1. 3 Granny Smith apples, peeled, cored and finely chopped
  2. 2 Tbsp sugar
  3. 1/2 tsp ground cinnamon
  4. 1/4 tsp ground nutmeg
The streusel topping
  1. 1 cup packed brown sugar
  2. 1 cup flour
  3. 1/2 cup old-fashioned oats
  4. 1/2 cup (1 stick) butter, softened
The drizzle
  1. 1/2 cup caramel topping for drizzling after baked
Instructions
  1. For crust: Preheat oven to 350°. In a medium bowl, combine flour and brown sugar.
  2. Cut in butter with a pastry blender or your hands until mixture is crumbly. Press evenly into a 9x13 baking pan lined with heavy-duty aluminum foil. Bake 15 minutes or until lightly browned.
  3. For filling: In a large bowl, beat cream cheese with 3/4 cup sugar in an electric mixer at medium speed until smooth. Then add eggs, 1 at a time, and vanilla. Stir to combine. Pour over warm crust.
  4. In a medium bowl, stir together chopped apples, remaining 2 Tbsp sugar, cinnamon, and nutmeg. Spoon evenly over cream cheese mixture.
  5. For the streusel topping: In a medium bowl, combine all ingredients. Mix together well. Sprinkle streusel topping over apples. Bake 40-45 minutes, or until filling is set. Let cool and then transfer to refrigerator. Cut into squares. Serve cold with a caramel topping drizzled on top.
