This soup was a huge hit. I made it a few days ago when I had some girlfriends over and they loved it! I’m a huge fan of tomato soup and this is a spruced up version of the classic.
The original recipe called for 1/4 cup of chopped sun dried tomatoes, which we weren’t feelin’ at the time. If that sounds like something you’d like, throw those in too.
Creamy Tomato Soup with Tortellini

Ingredients
- 1 tsp minced garlic
- 2 Tbsp olive oil
- 2 10 3/4 cans of Campbell's tomato soup
- 2 cups of half and half
- 2 cups of chicken stock
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 9oz package of cheese tortellini
- 1/4 grated parmesan cheese (optional)
Instructions
- Sauté garlic with the olive in a large pot over medium heat until garlic is fragrant and slightly brown
- When garlic is done, add tomato soup, half and half, chicken stock, and seasonings.
- Bring to a simmer, about 5 minutes (do not boil)
- Once simmering, add the tortellini and cook according to the package directions
- Once the tortellini is cooked, serve and garnish with parmesan cheese if desired.
