Like most humans, we resolve to eat healthier starting in the new year. We made this homemade granola to add to our breakfast menu which will now include yogurt parfaits. It’s a lot easier to eat something that’s good for you when it looks pretty and tastes delicious. Oats and nuts weren’t exactly regulars in our diet but they will be now!

To make a yogurt parfait, just layer granola and yogurt in a glass. You can add in any fruit too. Our homemade granola is also tasty sprinkled over ice cream or blended up in a smoothie. It’s even delicious just by itself. We would love to hear what you eat it with. Let us know!

Ingredients
  1. 2 cup old-fashioned oats
  2. 1 tsp cinnamon
  3. 1/2 cup brown sugar
  4. 3 Tbsp butter, softened
  5. 1/4cup crushed walnuts
  6. 1/2 cup peanut butter
Instructions
  1. Preheat oven to 350°. Line a baking sheet with parchment paper.
  2. In a large bowl, mix together oats, cinnamon, sugar, butter and walnuts. Use your fingers! It will turn into a crumbly mixture.
  3. Pour mixture onto the baking sheet. Spread evenly.
  4. Heat peanut butter in microwave for 30 seconds or until pour-able. Pour over oat mixture in pan. (It probably won't pour evenly but that's okay if there are clumps.)
  5. Bake for about 20 minutes. Remove from oven and let cool completely. Gather up using parchment paper and pour into an airtight container.
Notes
  1. You can substitute peanut butter for any nut butter, nut-free butter or omit completely.
