Bacon Wrapped Dates with Mascarpone

We’ve been covering lots of things with bacon lately and we’re sorry, but, we’re not sorry. I had bacon wrapped dates at a restaurant not too long ago and fell in love. I was a little scared to try them but once I did, I wanted more! Dates are basically giant raisins but even more sweet. Wrapped in salty bacon and dipped in creamy cheese is just beyond delicious.

We grabbed up a big bag of whole pitted dates near the fruits at the grocery store. We grow date trees out in the desert in SoCal so they are readily available at all grocery stores. If you can’t find them in a store near you, you can find them online.  There is an awesome little stop near Palm Springs that sells a ton of date goodies. It’s called Hadley Fruit Orchard. Their most famous is the date shake. Lauren and I stopped there and tried one when we took a trip out to Salvation Mountain. They were so good! Now that we have a giant bag of dates, we will have to try making a date shake. That’s our next experiment. In the meantime, try these little goodies. You’ll love them!

Bacon Wrapped Dates with Mascarpone

Ingredients
  1. 24 whole, pitted dates
  2. 8 slices of bacon
  3. mascarpone for dipping
Instructions
  1. Preheat oven to 375°. Cover a rimmed baking pan with foil and place a wire rack on top. Spray with non-stick cooking spray.
  2. Cut each slice of bacon into thirds, creating 24 pieces.
  3. Wrap each date with a piece of bacon and place on wire rack. Secure with toothpick if needed.
  4. Bake for 25 to 30 minutes or until bacon is cooked but not too crispy.
  5. Serve with a dollop of mascarpone.
