My kids have learned who the Ice Cream Man is. They hear his music playing from a city away, I swear. I have yet to actually make it outside with them to buy something from the ice cream man ( he has really bad timing) so for now they can settle for homemade popsicles! I bought a popsicle mold last year and I am just now putting it to use. The first ones I made were these strawberry limeade popsicles. They were so good!
I used fresh strawberries, limeade and some sugar. That’s it! Just three ingredients. I blended them together really well and then poured them into the molds. They were ready to eat the next day. The girls absolutely loved them. You can tell by the pictures I’m sure. Limeade tends to be a bit on the sour side depending on the brand you use. It’s best to use strawberries when they are at the peak of ripeness that way the sweetness really counterbalances the sourness of the limeade. I can’t wait to experiment with more flavors and even make an adults only popsicle! Margarita on a stick anyone?

- 1 1/4 cups fresh strawberries, sliced
- 2/3 cup limeade
- 3 Tbsp sugar
- Place all ingredients in a blender and blend until liquid (some small strawberry pieces may remain). Pour into popsicle molds and freeze until solid.
